Overview :
The ‘Restaurant Menu Engineering for Profit’ focuses on
analysis of the financial performance of a restaurant
menu and the management of restaurants with the
objective to maximize revenues and profits from the
business.
The workshop introduces the economic principles of a
restaurants operations focusing on the menu as a tool
for generating revenues. Different approaches to menu
analysis and menu engineering will be discussed.
