SYSTEM STUDY IN TAGAYTAY BREWING CORPORATION
Authors: Emnil, Keith Anthony; Uy, Jorge Simon Joaquin; Taguian, Geri
Presenter: Engr. Geri Taguian (geri.taguian@cvsu.edu.ph), Cavite State University

This system study conducted an in-depth analysis of business operations at Tagaytay Brewing Corporation in the
Philippines, aiming to identify opportunities for performance improvements. Through the DMAIC methodology,
the researchers utilized data-driven tools like process mapping, Pareto analysis, statistical forecasting, and cost-
benefit analysis to assess current systems. Major problem areas identified included production planning,
inventory management, worker safety, standard operating procedure adherence, and infrastructure reliability.
Implemented solutions focused on optimizing batch sizes and purchasing control, cold storage redesign,
protective equipment protocols, solar photovoltaics installation, and streamlining the brewing process.
Quantitative results showed an estimated ₱6,168,865.78 annual savings from production cost reductions plus
₱15,480,000 in avoided electricity purchases after installing solar panels in 25 years. Non-financial impact was
also substantial, with 5% faster throughput in the brewing process, 7,791.5 seconds reductions in keg handling
time, and standardization of the brewing processes. The industrial engineering techniques and solutions drove
measurable enhancements across critical aspects of Tagaytay Brewing Corp’s operations, catalyzing world-class
benchmarks in efficiency, sustainability, infrastructure utilization, and worker welfare. This empowers both
current performance and strategic scalability of the brewery. In conclusion, the study delivered high-value
process upgrades for stability and profitable growth ahead, with over ₱21.6 million in projected lifetime financial
savings. Keywords: Beer, Brewery, DMAIC Lean Six Sigma, System Study | Domain: Operations Management
