Method
Peel, wash and dice the onions.
Dry the fish using clean paper towel and lay them into deep trays.
Heat the oil in a sauce pan and add the onions, sweat gently until soft.
Bake bread in the oven until crisp then grate or blend to make bread crumbs.
Mix together all the herbs, onions and bread crumbs.
Smooth the bread crumb mix on the fish and bake in the oven for 15 minutes. Gas 5/190°C.
Remove from the oven and serve.
