Method
Place a sheet of tin foil on the work surface, place a piece of fish on top.
For the mediterranean mixture - halve the cherry tomatoes, peel and slice the garlic, roughly chop the fresh basil and add the oil and water.
Top each fish fillet with the mediterranean mixture and seal in the tin foil securely. Place on a baking tray.
Bake in the oven for 8-10 minutes at Gas 4/180°C until the fish is cooked through.
Open the foil and serve.
