Method
Cook the macaroni in boiling, salted water for approximately 10 minutes. Once cooked drain well and cool under running cold water. Poach the salmon in the milk for around 8 minutes, remove the fish and keep the milk.
In a suitable pan melt the margarine and add the flour to create a roux. Cook gently for 2/3 minutes before adding the milk a little at a time until you have a thick creamy sauce Add half of the cheese.
Finely slice and wash the leeks and steam for 3 minutes, add the leeks along with the spinach to the sauce.
Break up the salmon, drain the tuna and mix with the sauce.
Add the cooked macaroni and mix together well.
Transfer to a suitable oven tray and sprinkle over the breadcrumbs. Add the sliced tomato and finally finish with the grated cheddar.
Cook in a hot oven for around 25-30 minutes Gas 4/180°C until a core temperature of 75oC has been achieved.
