 Bake the fish cakes in the oven as per manufacturer’s instructions, Gas 4/180°C
 Mix mayonnaise with lemon juice, place into a serving dish and chill until service.
 Cut each lemon into 6 wedges.
 Place baked fish cakes into a gastronorm tin or ceramic dish and garnish with lemon wedges.
