                           Add the chopped tomatoes and 1ltr of water to the fried onions and garlic. Bring to the boil and simmer for 20-30 minutes. Add the tomato purée, mixed herbs, salt and pepper, and sugar. Simmer for a further 15 minutes.
Method
 Peel and finely dice the onion. Fry in a large pan in olive oil until softened, add the garlic purée and cook for a further 5 minutes. Finely chop the parsley and set aside.
  Cook the plant or Quorn balls as per manufacturer's instructions and then add to the simmering tomato sauce.
 In a large saucepan cook the pasta as per manufacturer's instructions. Drain well and serve coated in the sauce and plant or Quorn balls, sprinkle with fresh chopped parsley.
