 Cut all the vegetables to roughly the same size, coat well with the pesto and season with a little salt and pepper.
 Roast the vegetables in a hot oven for approximately 25 minutes, Gas 4/180°C. Meanwhile cook the sausages on a separate tray for 15 to 20 minutes.
 When the sausages have reached a core temperature of 75°C cut each one into 3 on a slight angle.
 Warm up the tomato sauce and mix with the vegetables and sausages.
   TIP: This is great served with couscous or equally good with brown rice and red cabbage slaw. You could even put it with a jacket potato.
