Method
Wash, peel and dice the onions, carrots and celery.
Heat the oil in a large pan and add the diced vegetables, fry until softened.
Add the Quorn pieces, chopped tomatoes and vegetable stock, simmer for about 40 minutes. Then 10 minutes before it has finished cooking add the peas and sweetcorn.
Thicken with the vegetable gravy mix then season if required.
Transfer to a pie dish.
Roll the puff pastry to the desired size and cover the pie dish.
Brush with egg and bake for 20-30 minutes until the pastry is golden brown. Gas 4/180°C.
