   Method
 Finely dice the onions, peppers and garlic.
 In a suitable pan gently fry the diced mixture with the Cajun spice for 5 minutes, without colouring, until soft.
 Add the chopped tomatoes and season well.
 Bring to a simmer then add the the five bean salad.
 Using the tortilla layer up the same way you would with a normal lasagne.
 Finish with the cheese and béchamel sauce and bake in the oven for approximately 30 minutes. Gas 6/180°C
 Allow to cool slightly before serving.
   TIP: you can add more spice if required to spice things up a bit, this is great served with red cabbage slaw and garlic bread
