                     Method
 Mix the chicken and the cornflour together then seal in a hot pan.
 Remove the chicken from the pan, add the onions and chopped green peppers to the pan and cook gently for 5 minutes.
 Add the black bean sauce and the chicken back into the pan.
 Cover with tin foil and cook in a hot oven for 1-11⁄2 hours or until the chicken is tender. Gas 4/180°C.
     Serve with steamed rice.
