Method
Preheat the oven to Gas 4/180°C, line a flan tin with parchment.
In a bowl, stir together the flour, cinnamon and sugar. Add the oil and eggs and mix until blended, then stir in the grated carrot.
Spoon the mixture into the lined tin and spread evenly.
Bake for 30-40 minutes in a preheated oven. Cool cake before removing from the tin.
Make the icing in a bowl by creaming the margarine and the icing sugar together, beating out any lumps.
Spread the icing evenly over the cooled cake.
Grate the zest of an orange to garnish if required.
