Method
Brown the mince in a suitable pan and drain off any excess fat.
Add the onions to the lamb and cook for 5 minutes.
Add your spices and continue to cook for a further 5 minutes, add a little drop of water if the pan is looking a bit dry this will help to cook your spices through.
Add the grated carrot and peppers along with the chopped tomatoes and cook out for 30 minutes, stirring occasionally.
Finish with the chopped coriander and serve.
