Ramsay’s Israeli
This is Lee’s office and it’s a paradise for sweet lovers. Instead of a
computer - an ice cream maker, instead of pencils - colorful candy, that’s
the way it is when the office is the patisserie of one of the most famous
chefs in the world and Lee is in charge. At the age of twenty-seven Lee
Shamir was able to place herself as a rising star in the world of patisserie.
It all started pretty much by chance. “At some point after the army I said
that I kind of feel like I don’t have a hobby…” even though her record at
this stage was being the hostess at meetings with friends at school, Lee
decided to try out her fortune professionally in the field. She realized
pretty quickly that her great pleasure comes from the lower section of the
menu, the desserts. Lee decided to learn, for the first time, professional
cooking and went to a culinary school in New York. And then came an
offer that’s hard to refuse - move to London and work for chef Gordon
Ramsay. In the past decade Ramsay became famous as a vulgar and tough
chef on the show Hell’s Kitchen. But alongside the curses and pedantry
there’s a brilliant chef who has fourteen Michelin stars, with restaurants all
over the world. Today Lee manages the patisserie at Ramsay’s ‘Heddon
Kitchen’, a restaurant that serves British food with European and Asian
inspiration, and since Lee got the job - Israeli inspiration as well. Lee is
one example of the Israeli kitchen’s great success in the Kingdom. If the
current trend continues, London’s Soho will turn into a small Tel Aviv,
and in her meetings with Israeli colleagues that continue coming here, Lee
will be in charge of dessert.
