Saving Food
Shai and his friends dreamt of this moment for three years, this month it
happened. In the middle of the Talpiyot market in Haifa, Robin Food
opened. A place that is more than another restaurant in the area, a place
that has a special emphasis on the materials in it’s menu. Six AM, the
wholesale market in Haifa, Robin Food’s team goes shopping, working
quickly. (They) still have to cook everything (they) collect, at noon food is
already supposed to be served to customers at the restaurant. Most of the
workers at the market already know them, give them crates, the rest they
find in piles tossed aside. These vegetables are on the floor because
merchants thought they aren’t pretty enough, also to make room for more
fresh produce. Kobi is the guy who puts ideology on a plate, using tossed
food to make dishes. The purpose isn’t to lower costs or feed the needy,
Robin Food wants to challenge our consumer habits – it’s not just that we
buy too much, we also throw too much away.
