The fish are kept in ice on the boat.
Locator are the government company,
under the Azores Ministry of Fishery, that
control all landings –ensuring quality
analysis and traceability. Landings are
inspected on arrival, hand-sorted and
logged with instant histamine and other
quality tests performed.
