The fish arrives whole (ALWAYS whole, NEVER in loins) to the factory on
Sao Gorge island in the Azores. The vast majority of tuna fisheries work
on loins, frozen twice and send to a factory thousands miles away. We
only work from the whole fish during each steps of the production. The
factory has been granted a IFC score of more than 97%. A lot of the
processing is done by hand in the factory by local employees. The factory
is a critical employee on this small island of only 900 inhabitants and
supports the local school bus service as well as providing vital jobs. The
traceability is assured back to the boats and forward through the lot
numbers in the factory.
