Lavender Tea Bread
This is a bit of a bread/cake hybrid that is meant to be enjoyed with tea!
Ingredients: Combine the milk and lavender in a
3/4 cup milk small saucepan over medium heat. Bring
1 tbsp fresh lavender, finely chopped to a simmer and remove from heat,
6 tbsp softened butter allowing to cool slightly.
1 cup white sugar
1 tsp lemon zest In a medium bowl, cream the butter and
2 eggs sugar until smooth. Beat in the eggs and
1/4 cup Greek yogurt lemon zest, then add the Greek yogurt
1/2 tsp vanilla extract and vanilla.
2 cups all-purpose flour
1.5 tsp baking powder In a separate bowl, combine the flour,
.5 tsp salt baking soda, and salt. Alternate adding
the creamed mixture and the milk until
Glaze: just blended. Pour the batter into the
2/3 cups powdered sugar prepared pan and bake for 45-50 minutes.
3 tsp lemon juice
1/2 tsp vanilla extract Prepare the glaze by combining the
powdered sugar, lemon juice, and vanilla.
Instructions: Poke holes in the hot loaf with a fork and
pour over. Cool completely on a wire rack.
Preheat oven to 325 degrees. Grease a
9x5 loaf pan. Enjoy!
