Alzheimers Fighting
Salmon Salad

Following the parameters of the MIND (Mediterranean-DASH Intervention for
Neurodegenerative Delay) diet, I have created this delicious recipe that is full of
vitamins and minerals that help fight Alzheimers and dementia.
Ingredients Toss in the jullienned carrots, chopped
Two handfulls fresh kale, chopped bell pepper, garbanzo beans, and
One handfull fresh spinach walnuts.
One carrot, jullienned
One half red bell pepper, chopped Lay the baked salmon on top, either
Fresh caught baked salmon, seasoned as whole or sliced. Drizzle with a bit of olive

Instructions
Heat the oven to 400 degrees Farenheit.
Place the fresh salmin in a baking dish
and season as desired. Bake the salmon

Wash and dry the greens. Remove the
stems of the kale and roughly chop the
leaves. Toss together with the fresh spinach.
