Kale and Mushroom
White Bean Soup

Antioxidant packed kale and mushroom paired with fiber and protien rich white
beans come together to create a delicious, nutritious, gut-healthy soup that also
combats Alzheimers and dementia.
Ingredients One teaspoon mirin
One teaspoon olive oil Three cups mushroom or beef broth
One small onion, diced Two cups water
Eight ounces cremini mushrooms, sliced One teaspoon salt
Eight ounces shittake mushrooms, sliced Two carrots, sliced very thin
Two teaspoons soy sauce Two cups white beans, such as cannellini
Two cups chopped kale
Black pepper to taste
Instructions
Heat the oil in a soup pot. Add the onion
and cook until soft, then add the garlic
and cook for about a minute. Add the
mushrooms and cook until the moisture
begins to evaporate. Add the soy sauce
and mirin, mixing well to combine.
Add the broth, water, carrots, and salt.
Bring to a boil then lower to a simmer.
Add the beans and kale, stirring well.
Once fully warm, taste for seasoning and
