Note: Pies may also be baked on parchment lined baking sheet in a preheated 400 degree
oven until golden brown, 20—22 minutes.
Pie Dough for Hand‐pies
2‐1/2 cups all purpose flour
1 teaspoon sugar
1 teaspoon salt
6 ounces butter, diced
1/4 cup shortening diced
1 tablespoon white vinegar
1/4 cup water, plus more if needed
1. Combine the flour, sugar, and salt in a standing electric mixer fitted with the
paddle attachment.
2. Add the butter and shortening and mix slowly, until just incorporated.
3. Add the vinegar and water, little by little and mix until dough just comes together.
4. Gather dough into a smooth disk and wrap in plastic wrap.
5. Refrigerate for at least 1 hour before rolling out as desired. Yields enough dough
for 6 hand pies or 2 single‐crust 9‐inch pies.
Apple Pie Filling
2 apples, small dice
2 teaspoons lemon juice 1 cup water
3/4 cup sugar
3 tablespoons cornstarch
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
