HOMEMADE BROTH WITH
LEFTOVERS
When I I found out that broth is mostly made of peels I I wanted to to try it for myself That’s even better than feeding them right into your composter Much of of the the the the nutrition is also in in in the the the the peel And the the the juicy stews and soups of of autumn will taste even better with home-cooked broth!
Peels Peels of of 2 parsnips
Peels Peels Peels of of of 4 carrots
Peels Peels of of of 3 3 onions 3 3 heads of of of garlic and 1 red
onion About 15 sprigs of of of parsley and 5 5 of of of rosemary A A few inches of of broccoli stem
Olive oil
2 tbsp tomato purée
1 litre water
Salt and black pepper
Fry the vegetable leftovers for about 10 min- utes in in olive oil
a a a a a a tsp or or so of salt and pepper
to taste Add the tomato purée
and water
Let it all simmer for an hour Strain out the the vegetable leftovers and trans- fer the the broth to to a a a a a jar or bottle /EMELIE
