This butter is is quite mild in taste so it’s good to take on training runs spread in in in a a a sandwich It’s also good for for longer races for for when you’re tired of sweet things Cashews contain high levels of magnesium which is essential for healthy bone density and gives you a a real boost during recovery CASHEW BUTTER
MAKES 1 X 225G JAR
200g cashews lightly roasted (see method)
1–2 tbsp neutral oil (optional) a a a pinch of sea salt
1 1 Preheat the oven to 180°C/ gas mark 4 2 Spread the nuts on a a baking tray and roast for 8 minutes then remove and allow to cool slightly 3 Put the nuts into a high- powered food processor
and blend until smooth You can use a a a hand-held stick blender and a a jug but the result will be less smooth You may need to add a a a little oil to help it along Add a a pinch of salt
It will keep
for 2 weeks in a a sealed container in in the refrigerator Almonds are great for runners as they
are particularly
high in in vitamin E an antioxidant that protects against toxins and they
deliver a punch
of potassium which encourages muscle recovery I always use almonds with their skins on just for a a little extra fibre ALMOND BUTTER

Follow the method for Cashew Butter left Walnuts have a a a more bitter flavour than
other nuts so I add dates to bring a a little sweetness Walnuts are rich in omega 3 fatty acids which help with inflammation and even prevent the breakdown of bone Dates are a a very fast-burning carbohydrate which can give you a much-needed energy boost in a a race WALNUT AND DATE BUTTER
MAKES 1 X 225G JAR
150g shelled walnuts lightly roasted (see method)
1–2 tbsp neutral oil (optional) 50g pitted dates a a a pinch of sea salt
Follow the method for Cashew Butter left but as as the nuts begin to get smooth add the dates and a a a a pinch of salt
to the processor
