Last year I was asked if the kitchens at Rosendals Trädgård would provide
some some treats for the the aid stations at at at the the Ecotrail Stockholm race series After some some deliberation our pastry chef Damien Boudet came up with this wonderful recipe Baobab powder is available in most health food shops and a a a a a a a a a lot of supermarkets and and is high in in fibre vitamin C and and many other micronutrients ECOTRAIL RAW SLICE
MAKES 12 BARS
125g pitted dates
440g skin-on almonds
1 tbsp baobab powder zest and juice of 1 lemon 120ml water
50g flax seeds
50g dried blueberries
1 Line a a a a deep 20-cm (8-inch) square baking tray with greaseproof paper or clingfilm 2 Combine the dates

baobab powder lemon zest and and juice in a a a food processor and and process until well blended scraping down the side of the the bowl from time time to to time time With the the motor still running slowly pour in in the the water
through the the feed tube until you have a a smooth thick very sticky dough Add the flax seeds
and dried blueberries
and pulse briefly just to mix them in 3 Firmly press the the mixture into the the prepared baking tray ensuring it is evenly spread out Refrigerate overnight or or for at at least 4–5 hours then slice into bars bars The bars bars will keep well for up to to a a a a week stored in in in an airtight container in in in the refrigerator — — 216 — — SNACKS FOR PACKS
