Spiced Monkfish Fillet
Serve Task
Serving time approx. 15 minutes
The steak needs to be taken out of the fridge 2 hours before cooking.
Ingredients required: Equipment required:
• Prepared Monkfish fillet • Tongs
• Griddle Pan
Pantry Ingredients required:
• Olive oil/Rapeseed oil
• Salt and pepper
1. Get a griddle pan to a medium to high heat, once to temperature
lie the monkfish fillets directly onto griddle pan. Sear every side on
hot parts of the pan 2 minutes.
2. Once the monk fish is charred add a knob of butter to the pan and
a squeeze of lemon juice. Baste the fish in the butter continuously
and cook for a further 10-15 minutes for a fillet of your size.
Alternatively cook over open flames of a BBQ and brush with
butter throughout cooking. Cooking times are dependent on the
size of the fillets, a perfect cook is when it is only just cooked all the
way through, and should reach a temperature of 67 centigrade if
using a probe.
