BDES seeks out and invites the leading experts in the field of distilled spirits production to teach in our dedicated classroom. Together with a
small enrollment (maximum 16 seats) you can be sure of receiving a quality education with a lot of one on one attention and group discussions
included in the program. Sensory evaluations of classic style examples and other exercises add to the value, experience and memories of the
topics covered by the instructors.
NIALL TUBRIDY
Niall Tubridy has over 20 years’ experience in the Irish drinks industry across wine retailing, buying, wholesaling,
and supply chain management for Superquinn Ltd., Kelly & Co. (Dublin), and Tubridy Wine Merchants.
He holds a Wine & Spirits Educational Trust Higher Certificate but his real learning has come from extensive travel
across the wine regions of France, Spain, Catalunya, Argentina & Chile, engaging with growers, walking the land
and constantly evaluating their wine
His extensive knowledge of the history and advertising of Ireland’s brewing and distilling industries led him to
diversify into whiskey tourism with the Irish Whiskey Museum and Dublin Whiskey Tours, including event planning
for The Whiskey Experts catering for international corporate and MICE groups. As operations manager he
oversaw the successful launch of Irish Whiskey Magazine in 2016.
Niall is an avid collector & researcher regarding Irish distilling and brewing with particular attention paid to
interpretation of design within its advertising, packaging and labelling.
CATHAL JOYCE
Cathal Joyce spent many years in radio broadcasting before having an epiphany. This new direction came
after a casual interest in all aspects of liquid enjoyment, tangible and other.
Like the revitalised world of Irish whiskey he changed course and became a distiller.
His fascination led eventually to an ever-expanding quest to learn all he could about the age-old science
and modern production.
Working with Glendalough distillery while undertaking his professional exams with the Institute of Brewing
& Distilling, gaining certificates in malting & brewing and a diploma in distilling. Additional studies with
wine has furthered his appreciation of aroma and flavour being awarded a Level 2 certificate with WSET.
During this course Cathal will combine his knowledge with an up-close personal insight and exploration
into the current Irish whiskey distilling landscape.
WILL MURPHY
Will Murphy, is a qualified distiller from the Institute of Brewing & Distilling.
Having completed professional examinations, he was awarded certificates in brewing, malting & packaging,
followed recently with a diploma in distilling.
Will has held the position of head distiller & production manager with Tipperary Boutique distillery, Co. Tipperary.
In his early years Will began his journey in whiskey and found he liked it. This passion led to being a founding
member of the Irish whiskey society in 2009, currently Ireland’s largest network with over 3,000 members, Will
regularly organises and presents sensory evaluations and as a result additional chapters have opened up across
the country. Given his ability he has been instrumental in working with various distilleries, laying down casks for
future releases at club level.
Will’s knowledge is extensive and he is regarded by many within the industry to be a resourceful independent
