13 Feb Brenda Maria was born in 1930 and she lived on a small Italian Island called
17 Feb Pamela Ponza. As a child she loved being surrounded by the sea and she swam
19 Feb Elaine in the clear blue waters every day. Maria’s mother Anna was a
wonderful cook but Maria was only allowed to learn by watching.

Food shortages due to the war meant that nothing could be wasted, so
it wasn’t until Maria came to Australia in 1952 that she learned to
weave her magic in the kitchen.
She has an absolute passion for food and her favourite dishes include
Roast Pork, BBQ meats, Seafood Marinara and simple but classic
Tomato based sauces and of course pasta! Vince, Maria’s husband,
shares her love of fine food and they can often be heard in the dining
room discussing the exceptionally flavourful dishes from their Italian

Maria’s Magical Pasta Sauce (Feeds four people)
Ingredients
Instructions
25 black kalamata olives
Stove top Temperature ‐ Medium
12 green olives with capsicum stuffing
Add oil to the saucepan, then sauté garlic till soft.
½ cup chopped basil
Add anchovies and stir until they dissolve
½ cup chopped parsley
Add tomato and water and cook till thick
1 tin anchovies in oil
Add all other ingredients and cook for 5 minutes.
1 tin chopped tomatoes
Add the pasta to the sauce and toss so that the flavours blend.
4 garlic gloves
(Maria’s favourite choice for this dish is spaghetti or linguini al
½ tin water dente)
4 tablespoons olive oil
