World's Best
Mashed Potatoes
The holiday season is gearing up so what better recipe to
tackle than the World’s Best Mashed Potatoes. Years ago, I
worked at a restaurant in NYC for a chef who trained under
Joel Robuchon. A world-famous chef who was known for his
legendary mashed potatoes. Chef Robuchon achieved a
balance of butter and potato that was ethereal and
unforgettable. He used a 2:1 ratio of potato to butter. This is
great in small amounts but in the real world you need a
lighter touch. Using his technique as a baseline this recipe
will produce velvety smooth and unctuous potatoes.
