CHEF'S CORNER






             M O J O   S A U C E






       Ingredients




       *Yields 1 Pint

          Juice of 2 oranges
          Juice of 4 limes
          1 jalapeño, stem removed, split
          lengthwise, seeds removed
          2 garlic cloves
          1 cup cilantro springs

          ½ cup olive oil
          1 tsp. sugar
          1 tsp. oregano
          ½ tsp. cumin
          1 tsp. salt
          ½ tsp black pepper


       Directions                                                                        Notes





         1. Blend all ingredients in a blender until
          smooth.
        2. Do not over process.
        3. You want the herbs to be speckled but
          not completely blended.
        4. Reserve sauce.
