Under Mark's patronage, Moor Hall has obtained two Michelin stars and five AA Rosettes. This year to complement the main stage ucff will be hosting the Global Kitchen Stage where they will be celebrating food, ingredients, and culture from around the globe. Mark will discuss the topic of Modern British food whilst demonstrating a dish or two.
After spending 12 years gaining knowledge by working in selected kitchens worldwide, Simon ended his tour at Copenhagen’s lauded Noma, where he spent 2 years at the original site and 14 weeks in Tulum, Mexico part of its pop - up restaurant. After spending so much time abroad, he felt passionate and patriotic about the UK and its exceptional produce. At 28 years of age, he returned home to the north of England, where he opened mana in Manchester. At the end of manas first eligible year, it won a much - coveted Michelin star, the first in Manchester for 44 years. mana is a 2 -seat modern restaurant with an impressive bespoke and an entirely open kitchen where the limitations of the past have been discarded to usher in a new kitchen organisation, as well as its working environment, which is more akin to a beautiful home rather than the traditional industrial feel of a commercial kitchen. This new format was implemented only to bring out the best from its Chefs, and therefore the menu, exclusively written and
developed by Simon. Simon describes his 14 to 18 course menu as "an ongoing evolution of experiences, research, inspirations, and accidents. mana is a direct reflection of my personality representing a clear, unadulterated vision inspired by my life so far".
Simon will take part in a live demo at ucff on the Global Kitchen Stage based on the topic of Nordic cuisine. He will explore the origins and history of Nordic food as well as demonstrating a dish or two.
