Recipe for the month
Guinness Lamb Stew:
1 lb. cubed lamb
2 tbl olive oil
2.5 c beef broth
8 oz tomato sauce
1 c chopped white onion
1 tbl lemon juice
.5 tbl minced fresh garlic
.75 tea ground cumin
.5 tea ground turmeric
.25 tea kosher salt
.25 tea ground white pepper
4 c Eggplant peeled and cut into medium cubes
1 c seeded and chopped red bell pepper
.25 golden raisins
.33 c h2o
3 tbl ap flour
2 oz Guinness
In a large Dutch oven brown meat in hot olive oil. Drain fat
from pan. Stir in beef broth, beer, tomato sauce, onion, lemon
juice, garlic, cumin, turmeric and salt. Bring to boiling. Reduce
heat and simmer for 30 minutes. Stir in eggplant, sweet red
pepper and raisins. Bring to boiling. Reduce heat and simmer,
covered, about 30 minutes more or till lamb and vegetables are
tender. If necessary skim while cooking. Combine h2o and flour.
Stir flour mixture into stew. Cook .25 c raisins and stir till
thickened and bubbling.
Ready to serve with the rest of your St. Paddys Day spread for
family or friends. Serves 4
