         Pol Roger also was the Champagne of choice of British dignitary Sir Winston Churchill, who once said of Champagne,
         “...In victory I deserve it, and in defeat I need it!”.


         Released in October of last year, Pol Roger’s 2008 Cuvée Sir Winston Churchill is showing brilliantly, unfurling in the glass with a complex bouquet of waxy
         citrus rind, dried white flowers, freshly baked bread, iodine and honeyed yellow apple. On the palate, the wine is full-bodied, powerful and vinous, with a
         deep and multidimensional core, broad structural shoulders and considerable concentration, girdled by tangy acids and displaying a youthfully frothy but
         incipiently fine mousse. The finish is long and intense. This is a terrific rendition of this reliably superb cuvée and well worth seeking out. Drink 2022-2045.

         Dom Pierre Perignon, a French Benedictine monk, set out his vision to “create the best wine in the world” when he became Cellar Master at the sacred
         Abbey of Hautvillers in 1668. Dom Perignon dedicated over 40 years to this mission, employing a visionary spirit and daring approach to the wine
         making process. Over that time, he became known as the ‘father of champagne’ for laying down the fundamental rules for the traditional Champagne
         production method (La Methode Champenoise or Traditionelle). A favored wine of the Sun King Louis XIV, Dom Perignon himself compared his wine
         to “drinking stars”.

         Dom Perignon Champagne is made through an assemblage (blend) of Pinot Noir and Chardonnay, created by using only the best grapes harvested from
         the 17 Grands Crus in Champagne and the Premier Cru of Hautvillers. One of the principle hallmarks of Dom Perignon is its absolute commitment to
         only producing vintage wines. Unlike many other Champagne houses, Dom Perignon does not produce a non-vintage Champagne. This commitment to
         vintage only requires Dom Perignon to reinvent itself every year, staying true to the daring and creative principles laid down by the Dom Pierre Perignon
         himself.

         “The 2008 Dom Pérignon is the first time the estate has released a wine out of order (the 2009 was released before the 2008) but the estate loved the wine so
         much they felt it warranted additional aging. This is a rich, powerful wine that still shows incredible purity and elegance, with a stacked, concentrated feel
         on the palate. It’s rare to find such a mix of ripe, pure, concentrated fruit paired with this level of purity, focus, and precision. This is a legendary Dom that
         surpasses all the great vintages of Dom I have experience with, including the 1990, 1996, and 2002”. 98 points, Jeb Dunnuck.

         #2.CW   NV     Collet Blanc de Blanc Brut                               Aÿ
         This generous and supple champagne is made exclusively from champagne’s white grape variety Chardonnay, the majority of which belonging to the
         terroirs of the renowned “Cote des Blancs” region. Pale yellow-golden color, balanced and attractive with a fine mousse and bead. The nose is subtle and
         light with a bouquet of grapefruit-citrus aromas, floral notes of acacia and white flowers. Gradual and delicate finish demonstrating perfect aromatic
         balance and finesse.

         “Chardonnay from three of the Côte des Blancs villages gives a strongly mineral character that has benefited from five years aging to produce a tight, taut wine
         that is just reaching maturity. Outstanding”.
