Tomato Chili Sauce
Sambal Tomat
Similar to Shrimp Paste Chili Sauce, Tomato Chili Sauce uses nearly all the same
ingredients with the exception of the shrimp paste. Light in flavor and soft in texture,
this chili sauce is widely used to accompany fried appetizers and main dishes. The
absence of shrimp paste in this version makes it a more versatile companion to other
foods. This sauce should be consumed within a few days because the fresh tomatoes
will spoil quickly.
MAKES 1 ½ CUPS (375 ML)
PREPARATION TIME: 5 MINUTES
COOKING TIME: 3-5 MINUTES
5-7 cloves garlic
2 shallots
4-5 bird’s-eye chili peppers, rinsed and ends trimmed
½ tablespoon oil
1 large tomato, rinsed and chopped into chunks
1 teaspoon salt
1 teaspoon sugar
1 Grind the garlic, shallots, and chili peppers using a mortar and pestle or food
processor until a smooth paste forms.
2 Heat the oil in a small pan over medium high heat and sauté the paste for about 1
minute until very fragrant and lightly charred. Add the tomatoes, salt, and sugar. Sauté
until the tomato has broken down slightly. Transfer to serving bowl and, if necessary,
use a fork to break down the tomato chunks further. Serve warm.
