          The Golf The Golf

Let’s start on the golf course. Along with the 18 holes at CasaBlanca
(just a two-minute drive from your room), there are 10 other courses in
the area the resort has dealings with, all just waiting for you to tee it up.

“It’s a great small-town type atmosphere and destination resort,” said
Christian Adderson, corporate sales manager. “And the golf courses
just add to the appeal and make it special. We’ve got six courses within
        six minutes of the resort.”

Ah, yes, the courses. On the way to Mesquite is Coyote Springs. In
Mesquite, there are The Palms, Falcon Ridge, Wolf Creek, two Oasis
courses (Palmer and Canyons) and Conestoga. Up the road in St.
George, Utah, are Sand Hollow, Coral Canyon and Sky Mountain. If
you can’t find one layout (or more) that fits your eye, you’re not looking
        very hard.

One of the favorites is the $99 special. It’s a one-night stay at the
CasaBlanca and one round of golf at either CasaBlanca or The Palms. Katherine’s Steakhouse
Add in a second round of golf for just $55.

Speaking of the CasaBlanca course, this Cal Olsen designed layout
reaches just over 7,000 yards from the tips. The risk/reward holes on
this course are plentiful including a pair of drivable par-4 holes—if
you’re a big hitter as well as accurate. The third hole (315 yards from
the tips but much shorter from forward tees) and the 15th (308 yards
but, again, shorter as you move forward) give players the option to give
it a go with the big stick. For the rest of us mortals, a layup shot to a
favorite wedge yardage definitely brings birdie into play on both holes.

The par 5s are also reachable in two for the big hitters, especially the
second. At 507 yards from the tips, a good drive sets up a long iron or
hybrid into a green with three bunkers standing guard as well as water
on the right. Do you dare give it a shot?

There are more golf packages available than players can shake a driv- The Spa
er at. Golfers can play as many courses as they like and stay as many
nights as they like with their ‘Build Your Own Custom Golf Vacation.’

          Dining

After the round, or rounds, you’ll want to grab a bite to eat. From
room service to the café to the Mesa Buffet to Katherine’s Steakhouse
(impressive seafood and steak options), everyone in your group will
definitely have a variety of meal options.

Lazzara said it matter-of-factly: “Katherine’s is definitely high-qual-
ity. These are some of the best steaks. We fly in the stone crabs and
Dover sole daily. Everything here is top-notch. I’d put Katherine’s up
against any Vegas steakhouse any day.”
