Gallagher has a bar and restaurant located
on Central Avenue in downtown Medford. “I
want to get the Immortal Spirits brand to the
public,” he says, “and a great way to do that is
to show them off in cocktails.” At the Medford
location you can get food, other beverages,
try their offerings on their own, or have them
in one of the creative house-made cocktails
that are specifically designed to showcase the
spirits. Immortal Spirits has the largest pro-
duction of the three.
Kemp’s location is a little more reminiscent of
the small winery experience. He has a mod-
est tasting room of about 1,000 square feet at
the distillery, located at 2537 Pioneer Road
in Talent. You can visit them on Saturdays
between noon and 6 p.m. Kemp’s future goal
is to sell 60 to 70 percent of his annual pro-
duction of 100 cases, and will be more aggres-
sive about that after his product gets more

have to get it at the liquor stores. He doesn’t
have a tasting room at this point, but is inter-
ested in the possibility of building one at some
time in the future, since he also sees it as a
good tool for growing the brand. His most
immediate goals are continuing to promote
locally, and trying to get a foothold in the
Portland market.
In almost every way, a craft spirits industry
was inevitable. Because of our history in the
craft beer industry, Oregon is uniquely posi-
tioned to be on the forefront of this move-
ment. Southern Oregon is also primed for
success because of the hard work and love
for the product by people like Gallagher,
Thompson, and Kemp. The future looks
bright in this growth industry.
