         on classic cocktails like the Old Fashioned,
         Manhattans, and Negroni, but adds,  “We
         don’t have a printed cocktail list because we
         want  to keep the focus on food and  wine
         pairing.”

         In the end, she says, “We are Italian, so obvi-
         ously Tuscan wines  in particular speak to
         us, but the list is still evolving and will be
         adding a couple hundred more wines from
         around the world over the next few months.
         I love Champagne, so I have been crafting an
         extensive Champagne selection as well.”
