Set your burner to medium–high heat, and stir well about every minute or so for the first
                   10  minutes.  This  will  keep  the  bottom  from  overheating  while  enough  fat  is  being

                   liberated to cover the bottom of the pan.






























                   After about 10 minutes, you’ll see a pool of fat forming on the bottom, which should be
                   merrily boiling away. You can now rest a bit and stir every 5 minutes or so just to keep
                   things well mixed.
