Ingredients
•
6 eggs
•
½ cup of self-raising flour
•
½ tsp of salt
•
½ cup of shredded cheese
•
½ cup of milk
Preheat oven at 200°C.
Chop veggies and ham into small pieces and leave aside.
Whisk eggs. Add salt, milk, flour and mix until combined. Add the optional
ingredients (toppings, and seasoning) if you wish and mix it all together.

½ cup of ham

½ cup of peas
•
½ cup of corn
•
½ cup of onion
•
½ cup of capsicum
•
½ cup of carrot
•
1 tsp of pepper
•
1 tsp of paprika
•
½ cup of basil
•
2 tsp of oregano
Meal Tip: These can be frozen to be reheated in the microwave later. (Approx. 2
minutes if frozen). Can be eaten warm or from the fridge depending on preference.

Method
4 Pour into lined or greased muffin tins and bake for 30-35 minutes.
Tip: This should make 12 muffins, great for batch cooking and meal prep.
