Ingredients
•
4-6 eggs
•
1 cup of frozen vegetables of your
choice
•
1 tsp of olive oil,
•
Salt and pepper to taste
•
1 cup of cheese of your choice
(parmesan, fetta, cheddar)
Crack eggs and whisk eggs one at a time in a bowl.
Add vegetables and cheese. Season both with salt and pepper.
In a deep medium sized pan add olive oil, pour frittata mixture into frypan and cook.
To brown the top of the frittata, place under grill for a minute until it’s golden.
Tip: This can be enjoyed both warm and cold. It can also be enjoyed with a salad if
desired.
