Ingredients
•
1 packet of kale
•
1 garlic clove
•
1 tsp of olive oil
•
½ packet of pasta of your choice
(spaghetti, penne)
•
¼ cup of lemon juice
•
½ cup of fetta
•
Salt and pepper to taste
Chop kale and place in boiling water for approximately 8 minutes. Then drain well
and set aside.
Cook pasta in salted boiling water – follow packet cooking instructions and drain.
When pasta is almost cooked, sauté garlic (chopped or whole) in a frypan with olive
oil. Add drained kale and pasta to frypan and stir through until all combined.
Add fetta and lemon juice making sure to season both with salt and pepper.

Kalamata olives to taste
•
Sun dried tomatoes to taste
•
Red peppers to taste

5 Mix it all together and serve on a plate to enjoy.
