Pumpkin Pie
INGREDIENTS: To make pastry:
Sift flour baking powder and salt.Rub
Pastry in the butter with your fingers.Add
225g flour
1 teaspoon baking powder small amounts of water and milk to
1/4 teaspoon salt make a stiff dough.Line a 9" pie dish
115g butter softened with the dough.
Cold water and milk to mix
To make pie filling:
Pie filling In a bowl mash pumpkin till lump
1 cup cooked mashed free.Add spices, salt, sugar, golden
pumpkin
(use about 350g raw) syrup and stir well.In a seperate
1/4 tsp salt bowl add the milk and beat in the
1/2 tsp cinnamon eggs.Mix the egg and milk mixture
1/8 tsp ground cloves with the pumpkin mixture.Pour the
1 tsp ground ginger mixture into the pie dish.Bake at
1/4 tsp nutmeg
3/4 cup brown sugar 220C for 15 minutes then lower
1 Tbsp golden syrup temperature to 180C and cook for
2 eggs 30 minutes until set.Serve with
3/4 cup milk
whipped cream!
