Applesauce French Toast

                                    Ingredients:

                                    Egg substitute equivalent to two eggs or four egg
                                    whites
                                    ¾ cup skim milk
                                    1 tsp ground cinnamon
                                    2 packets Truvia
                                    ¼ cup unsweetened applesauce
                                    Six slices wheat bread

                                    Directions:
                                    In a large mixing bowl, combine the eggs, milk,
                                    cinnamon, sugar and applesauce; mix well. Soak
                                    bread one slice at a time until saturated with liquid.
                                    Cook on a nonstick skillet or griddle over
                                    medium/high heat until lightly browned on both
                                    sides. Best when served hot. Points Value: 2 per
                                    serving.

                                             Basil Green Goddess Dressing

                                    Ingredients:

                                    •½ cup light mayonnaise, such as Hellman's
                                    •½ cup scallions, chopped
                                    •½ cup chopped fresh basil, packed
                                    •⅛ cup fresh squeezed lemon juice (1 lemon)
                                    •1 clove garlic, chopped
                                    •1 tsp kosher salt
                                    •½ tsp freshly ground black pepper
                                    •1 tsp anchovy paste
                                    •½ cup light sour cream

                                    Place all ingredients except for sour cream in a
                                    blender and blend until smooth. Add sour cream
                                    and process until blended. Keep refrigerated until
                                    serving. Makes 6 cups. Points Value: .75 per serving.
