                       RECIPE OF THE MONTH:
                       SIMPLE HOMEMADE SALSA

                        Executive Chef John Wooters


         Ingredients:
         1/2 small red onion minced
         2 tablespoons lime juice
         5 medium roma tomatoes quartered
         1/2 cup cilantro minced
         1 medium jalapeno stem removed and finely
         minced
         1 clove garlic minced
         1/4 teaspoon salt


         Steps:
         Place minced red onion into a large bowl. Drizzle
         with lime juice and let sit while preparing the rest of
         the ingredients.
         Add in diced roma tomatoes, cilantro, jalapeno,
         and garlic.
         Stir until well combined. Season with salt to taste.
