Easy Prawn Pasta
Ingredients
• Gluten free pasta
• 1tbsp ofcooking oil
• 2 onions,chopped
• 4 clovesofgarlic,minced
• 2 x 4 0 0 g tin s o f c h o p p e d to m a to e s
• 500g ofcooked prawns

1. H e a t o il in a p a n a n d c o o k th e o n io n s fo r 4-5 m inutes,untilsoft.
2.Add the garlic and chiliflakes (ifusing) for another m inute
3 . A t t h is s t a g e s t a r t c o o k in g y o u r p a s t a according to the specific instructions on the packet,as w heat free pasta’s vary in cooking tim e.
4 . A d d t h e t in s o f t o m a t o e s , p r a w n s , s a lt a n d pepperto the pan with the onions and
sim m er for length of tim e the pasta is cooking.
For the pesto if m aking your ow n:
• 50g pine nuts (if you need nut free use sunflow er seeds)
• 50g dairy free Parm esan (Violife do a good dairy free cheese)
• 80g fresh basil
• 1garlic clove
• 150m lextra virgin olive oil

make yourpesto.Add althe ingredients into a blender and blitz untilsm ooth.If c o n s is t e n c y is n o t r ig h t , a d d w a t e r o r lem on juice to m ake it sm oother.
6.Once pasta is cooked,drain and toss with the sauce.
