21lagered for several weeks at or near freezing temperatures so that yeast-derived flavor compounds are scrubbed from the beer, leaving a %u201ccrisp and clean taste.%u201d65 Since Owens%u2019 book was about expediency to obtain fresh beer, he recommends leaving the beer on the yeast and turning the fridge down to 32 degrees for a few days until the beer clears, then transfer to a keg, prime it with carbon dioxide, and connect it to a picnic tap. In ten days, the homebrewer will have fresh beer.66This innovation was revolutionary for amateur and would-be professional brewers. Charlie Papazian said, %u201cHe did well with it. Got people thinking.%u201d67 Brendan Moylan bought the first edition and immediately switched from extract brewing to all-grain brewing. His successes at homebrewing using Owens%u2019 system directly led him to open two award-winning brewpubs%u2014Marin Brewing Company in Larkspur, California in 1989 and Moylan%u2019s Brewing Company in Novato, California in 1994.68 Tony Magee of Lagunitas Brewing Company and Sam Calagione of Dogfish Head both referred to Owens%u2019 book as their bible when setting up their breweries.69Bill Owens%u2019 how-to guide also influenced Geoff Harries%u2019 homebrewing. As he relates in the 2015 Buffalo Bill%u2019s Brewery brochure to distributors and retailers, Harries bought Owens%u2019 book in 1987 and began brewing in his garage. He was so inspired by Owens%u2019 work that he walked into Buffalo Bill%u2019s Brewery and asked for a job.70 Bill Owens said no, but asked if he was willing to work for free. Harries worked for Owens for seven years before purchasing Buffalo Bill%u2019s Brewery and running it to this day. While working at Buffalo Bill%u2019s, Owens and Harries completely revised How to Build a Small Brewery and added new pictures and illustrations.71Even if no one else purchased a copy of the book, Owens%u2019 legacy was assured through Harries purchase of the book leading to the purchase of the brewpub.
