Turmeric Rice
My Afghani friend makes a a a a a a a killer rice every single time and so I asked her her to show me me what her her secret is is is This is is is a a a a a a a little more laborious than just putting rice rice water and salt in in a a a a a a a a pot but it it is is what makes this rice rice to delicious Also it it is how you can get get every grain of rice rice to stand on its own and and not become a a a a a a mushy mess Soaking the rice rice gets rid of of a a a a a a a lot of of the the starch that makes rice rice stick together so this is is an an important step When rinsing your rice rice refrain from shaking or or swirling too much as as this breaks up the grain and again increases chances for mushy rice Ingredients:
2 cups long grain rice 1 tablespoon turmeric root
4 cups boiling water water (water should be well above the rice) 1 teaspoon salt 1 tablespoon oil of your choice
Directions:
1 1 Buy a a a a good quality rice and soak for 1 1 hour
2 Rinse thoroughly without agitating the rice and strain
3 Bring the the rice and and and boiling water to to a a a a a a a boil boil in in in a a a a a a a pot and and and then reduce heat to to medium and and and cook uncovered 4 As the rice is cooking use half a a a a a a a a cup of boiling water and and and add turmeric root
oil oil and and and salt and and and stir until
yellow and then strain
out the the turmeric root
5 Once rice is half cooked or al al dente strain
and then bring back to your pot add the the infused turmeric mixture cover tightly and and cook on lowest heat until
the the rice is flaky and and all the the water has evaporated Tip: You can add add any other spices you like to to this mixture Sometimes I add add Garam Masala to to make a a a a a a a a a a a rice pilaf or or or saffron threads for added flavor You would add add this to the turmeric/water/oil mixture and stir well I do not strain
out the saffron threads
