        Fogo meets Fougères.
This might be the most perfectly matched collaboration in Canadian culinary history: Jonathan Gushue, Executive Chef of Fogo Island Inn, joins Executive Chef Yannick La Salle at the idyllic Fougères in the forests of Gatineau for a feast of farmed and foraged finds. For a quarter of a century, Fougères has been that best-kept secret among serious foodies; now the secret is out, and we couldn’t be more excited. Expect this duo to conjure bright fresh spring flavours from the bountiful gardens surrounding Fougères, along with any Fogo Island delicacies Chef Gushue might tuck in his suitcase. Think: wild berries, moose or fresh seafood like snow crab, lobster and halibut. All this bounty will be paired with treasured wines from a cellar that is both deep and broad.
ABOUT JONATHAN GUSHUE
Jonathan Gushue is one of Canada’s most celebrated, accomplished and admired chefs. Born in Newfoundland, he cooked at four-star hotels in Vancouver as well as London’s two-Michelin-starred Berkeley Hotel before joining Truffles Restaurant at the Four Seasons Toronto as Head Chef. In 2005, he became Executive Chef of the famed Langdon Hall, where he was named a Relais & Châteaux Grand Chef and secured the luxurious country inn a spot on the San Pellegrino list of the world’s 100 best restaurants. In 2015, he opened his first restaurant, The Berlin in Kitchener. Then in February 2018, he returned to his home province to join the celebrated Fogo Island Inn as Executive Chef. His meticulous but imaginative way with wild ingredients has since propelled the inn onto Canada’s Top 100 Restaurants.
ABOUT YANNICK LA SALLE
Born in the Outaouais region, Yannick joined forces with chef Charles Part at Les Fougères in 2011, where he became head chef in 2015. He travelled the world to gain experience working with well-known chefs such as Dan Barber and David Kinch. The large gardens of Les Fougères, the wonderful ingredients from neighbouring farms and the passage of the four seasons are what Yannick La Salle strives to honor in
his passionate cuisine. Yannick, who won gold at the 2019 Canadian Culinary Championships, is looking forward to collaborating with chef Gushue for this special culinary experience.
TASTY FACT
One of the surest signs of spring in Canada is the appearance of fiddleheads, the furled fronds of young ferns. These tender greens are delicious, and best served simply sautéed with garlic and splash of lemon juice.
Note: This event may have communal seating, please keep this in mind when booking tickets. Venues are not suitable for young children. Events run approximately 3-4 hours.
