new, highly lauded Sidewalk Citizen Park, where owners Michal Lavi and Aviv Fried and Head Chef Colin Metcalfe take on modern Israeli street food with a savoury detour through Alberta-grown ingredients. The evening begins with a lively reception before being seated for dinner in the stunning new restaurant, with its airy solarium that offers views onto Calgary’s historic Central Memorial Park. Expect unforgettable flavours in a delightful setting.
ABOUT MICHAL LAVI AND AVIV FRIED
The husband-and-wife co-owners of the growing Sidewalk Citizen Family began by baking and biking bread to customers in 2009. Today they have three outlets: the original bakery in Calgary’s East Village, a deli in Kensington and the new restaurant in Central Memorial Park. Neither began their careers in food: Michal Lavi comes from a geology background, but quit her job to pursue her dreams of making films and opening a bakery; Avid Fried studied physics and biomedical engineering before turning down a job in finance to become an artisan baker. He has since trained with top bakers in Paris and the U.S., and staged with Yotam Ottolenghi in London and Dan Barber at New York’s Blue Hill Farm.
ABOUT COLIN METCALFE
Sidewalk Citizen Park’s Head Chef started his culinary career at Catch Restaurant and quickly found himself running the Oyster Bar restaurant, where he implemented the Ocean Wise program and won many oyster shucking competitions. After five years at Catch, he moved on to run Thompsons restaurant at the Hyatt and Raw Bar at Hotel Arts, before joining the Concorde Group where he helped open Model Milk, Double Zero Pizza and National Beer Hall. TASTY FACT
Sourdough bread is made by the fermentation of dough using naturally occurring lactobacilli and yeast. It’s that long, slow fermentation—up to 48 hours—that gives it its tangy flavour, as well as reducing gluten, which is good news for those with sensitivities.
Note: This event may have communal seating, please keep this in mind when booking tickets. Events run approximately 3-4 hours and venues are not suitable for young children.
