Spring is the season of rebirth, and there could be no better time to celebrate the revival of one of Calgary’s most storied restaurants. Past and present come together deliciously at the thoughtfully redesigned Hawthorn Dining Room and Bar at the historic Fairmont Palliser Hotel. That’s thanks in large part to the talented team of hotel Executive Chef Eraj Jayawickreme and Hawthorn Executive Chef Dave Bohati. They welcome guest chef JP Pedhirney of Concorde Group to this spring feast of Alberta flavours, held in front of a stunning century-old hand-painted mural. Expect all the freshest local flavours of the new season—including the bespoke Hawthorn gin—in the city’s hottest and sexiest new/old restaurant.
ABOUT ERAJ JAYAWICKREME
Originally from Toronto, where he began his career cooking at the King Edward Hotel, the chef known as “e” has been gradually making his way west. Over the past 20 years, he has worked at the Sutton Place Toronto, Hilton Worldwide, Fairmont Winnipeg and now Calgary’s Fairmont Palliser. At the Palliser, he deftly juggles two demanding roles – Executive Chef and Food and Beverage Manager—for a four-diamond, 400-room hotel, without ever forgetting his motto: Respect the things you eat, and the people you feed.
ABOUT DAVID BOHATI
Although he began his career in high-volume restaurants on Vancouver Island, the Executive Chef of the Hawthorn Dining Room quickly found himself in the kitchen of the upscale Elixir, at Vancouver’s Opus Hotel, and never looked back. He arrived in Calgary in 2010 to cook at the fine-dining Rush, opened Market in 2013 and joined the team at Teatro as Chef de Cuisine in 2017. Along the way he took home gold (2014) and bronze (2017) at Calgary’s Gold Medal Plates, served as an ambassador for Canada Beef and enjoyed a summer stint at Montreal’s celebrated Park restaurant.
ABOUT JP PEDHIRNEY
As Senior Culinary Director at Concorde Entertainment Group, Chef Pedhirney oversees the award-winning Bridgette Bar (Canada’s 100 Best Restaurants 2017, 2018 and 2019) and newly opened LuLu Bar. Born and raised in Calgary, his career has taken him from Blackbird and Gilt Bar in Chicago to Calgary’s Rouge and Muse. In 2016, he opened Bridgette Bar and in 2019 LuLu Bar, which was nominated for enRoute’s Best New Restaurants and chosen Calgary’s Best New Restaurant 2020 by Avenue. In 2017, Western Living magazine named him Foodie of the Year.
TASTY FACT
Hawthorn Dining Room & Bar has partnered with Turner Valley’s Eau Claire Distillery to release its bespoke Hawthorn Gin. The elegantly infused gin offers both sweet and sour notes from hawthorn berries, lending it a purple hue, as well as a smooth honey finish. Hawthorn has also partnered with Last Best Brewery
to make a custom brew using leftover bread from its kitchen to ferment the pale ale, and donates a percentage of sales of the brew to the Calgary Food Bank.
Note: This event may have communal seating, please keep this in mind when booking tickets. Venues are not suitable for young children. Events run approximately 3-4 hours.
