In the new Langdon Hall: A Cookbook, Chef Jason Bangerter shares seasonally inspired recipes from the legendary Ontario country house with bountiful kitchen gardens. Now he brings those fresh flavours to Vancouver and Botanist, for a chef collaboration that celebrates all things wild and beautiful. His cuisine
is a perfect complement to that of Botanist Executive Chef Hector Laguna, who sources the brightest, freshest ingredients from farm, field, and forest for his elegant fare. Joining this duo will be Fairmont Pacific Rim’s Executive Chef Damon Campbell and Executive Pastry Chef Kate Seigel along with award-winning Creative Beverage Director Grant Sceney and Head Bartender Jeff Savage. Expect a multi-course feast
of seasonal flavours paired with whimsical cocktails and fine wines from an exclusive terroir-driven wine program. To top off this exquisite evening, each guest will take home a signed copy of Chef Bangerter’s stunning cookbook.
ABOUT BOTANIST AT FAIRMONT PACIFIC RIM
The airy, plant-filled Botanist is one of Vancouver’s favourite places for refined, globally inspired, and locally-flavoured cuisine. At its helm is Executive Restaurant Chef Hector Laguna. Originally from Mexico, Chef Laguna worked in Miami and Toronto before moving to Vancouver where he was Senior Sous
Chef at Hawksworth Restaurant prior to taking on the award-winning Botanist. Overseeing the culinary program at Botanist and throughout the property is Fairmont Pacific Rim Executive Chef Damon Campbell, who previously cooked at Thomas Keller’s French Laundry, led the teams at Shangri-La properties in Kuala Lumpur and Toronto, and was team captain for the Culinary Olympics gold-medal- winning Culinary Team Canada, while Executive Pastry Chef Kate Seigel joined the team after stints at Four Seasons, and Fairmont Château Whistler. Botanist has also been recognized internationally as one of the “Worlds Best New Bars” by Condé Nast Traveler’s Hot List and recently as one of the Top 10 Bars in Canada on the annual “Canada’s 50 Best Bars 2019” list, among many other accolades that make it one of the country’s most glamorous and sophisticated cocktail bars.
ABOUT JASON BANGERTER
Since 2013, Jason Bangerter has been Executive Chef of Ontario’s legendary “garden-to-plate” Langdon Hall Country House Hotel and Spa, which consistently ranks at the top of “best of” lists, including Canada’s 100 Best. He previously spent several years working at Anton Mosimann’s restaurants in Europe, where he was inspired by the pioneering chef’s concept of “cuisine naturelle.” In 2021, he published Langdon Hall: A Cookbook, a collection of seasonally inspired recipes with notes on techniques, ingredients, wine pairings and purveyors.

Salt water in cocktails? Indeed. It’s just one of the ingredients that comprise the “seaborne tincture” in the Botanist Martini, evidence of their award-winning cocktail program. The rest are: spruce tips, verbena, and elderflower liqueur.
